Tasty Beans

This recipe was my first successful attempt at making dried beans taste really yummy after cooking them!

Ingredients:

  • 1 Onion
  • 5 Garlic cloves
  • 1 Pablano Pepper
  • 1 Bay Leaf
  • 1-2 tomatoes | 1 can of diced tomatoes
  • Salt
  • Pepper
  • Taco Seasoning
  • Olive Oil

Instructions:

  1. Soak the beans over night on a large pot.
  2. Drain the water from the beans and add fresh water. Get the beans to a boil, then reduce to low. Add a bay leaf, and a good amount of salt.
  3. Cut the Onion in half and squash all the garlic cloves, removing the dried outer skin. Throw these ingredients into a pan with some olive oil and sautee them on medium. Once the onion starts looking clear, add a generous portion of taco seasoning. Cook for a bit longer to get the taco seasoning to release some flavor by coming in contact with the hot oil. Add these ingredients to the pot of beans and let simmer for at least an hour.
  4. At this point there should be less liquid left in the beans. Dice up and add a couple tomatoes. Let everything cook together and reduce to nothingness! (except the beans of course). This will probably be another 40 minutes or so. You may need to add some water back into the beans to prevent them from drying out.
  5. Add the beans to any dish and enjoy!
