Molasses Cookies

Ingredients:

  • 1 1/2 cups butter
  • 2 cups sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 4 1/2 cups flour
  • 4 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup coarse sugar

Directions:

  1. Mix butter and 2 cups sugar. Beat in eggs and molasses.
  2. Add dry ingredients and coarse sugar.
  3. Roll into 2 inch balls and bake at 350 degrees F for 12 to 14 minutes.

Sandra's Spicy Chocolate Chip Cookies

Ingredients:

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 1 cup (2 sticks) butter, unsalted
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 2 eggs
  • 2 cups chocolate chips

Directions:

  1. Preheat oven to 375 degrees F.
  2. Mix 2 1/4 c flour, 1 t baking soda, 1 t salt, 1/8 t nutmeg, 1/8 t cinnamon, and 1/8 t cloves in small bowl.
  3. In a large bowl combine 3/4 c sugar, 3/4 c brown sugar, 1 c butter, 1 t vanilla, and 1/4 t almond extract until creamy. Add eggs, one at a time, beating well after each. Slowly add flour mixture. Fold in 2 c chocolate chips. Scoop a tablespoon of dough and drop onto a cookie tray.
  4. Bake 9-11 minutes or until lightly brown. Cool cookies 2 minutes on the cookie tray, then finish cooling on wire rack. Store in air-tight container.

Swedish Donuts - Munkar

Ingredients:

  • 1 cup sugar
  • 5 eggs
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 5 teaspoons baking powder
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup (1 stick) butter, melted and 1/2 cup butter, melted (separate)
    ~Topping~
  • 1 teaspoon cinnamon and 2 teaspoons sugar (mixed together)

Directions:

  1. Whip 1 c sugar and 5 eggs until pale and creamy.
  2. Sift 2 1/2 c flour, 1 t salt, and 5 t baking powder in the mixture and stir together.
  3. Fold in 1 c cream, 1 c milk, and 1/2 c melted butter.
  4. Heat up the donut pan. Brush it with reserved 1/2 c melted butter. Pour batter into half of the mould.
  5. Cook 3-4 minutes, turn 90 degrees, and repeat until cooked on all sides.
  6. Combine the 1 t cinnamon and 2 t sugar for the topping. Roll the donut in the cinnamon-sugar. Serve with syrup and jam.
