Aunt Inga's Lemon Pie
Ingredients:
- 1/2 cup cold water
- 7 scant tablespoons corn starch
- 1 1/2 cups hot water
- 1 1/4 cups sugar + 6 tablespoons sugar
- 3 eggs (separate the whites and yolks)
- 2 lemons, pressed for juice + grind 1 of the rinds down
- 1 tablespoon butter
- 1 pre-baked pie shell
Directions:
- Preheat the oven to 350 degrees.
- Combine 1/2 c cold water, 7 scant Tbsp corn starch, 1 1/2 c hot water, 1 1/4 c sugar in saucepan and cook for about 15 minutes.
- Then beat and add 3 egg yolks, the juice of 2 lemons, the grated lemon rind, and 1 Tbsp butter. Put into baked pie shell.
- Make the meringue by beating together 3 egg whites and 6 Tbsp of sugar.
- Place the meringue on top of the lemon pie and bake until lightly brown in the oven about 10 to 12 minutes.
Notes:
2 Tbsp of sugar per egg white used.
